The Grill: Use a good-quality grill – thick, heavy grates matter. Make sure they’re properly seasoned, which is similar to seasoning cast iron. Apply a cooking oil to the grates and heat until the oil cooks off.

Wood smoke: Put wood chips in a foil pouch directly over heat for a slightly smoky flavor.

Location: Pretty much everything can go over direct heat, but after it’s properly marked, move to the edges for even cooking.
