When does summer end and fall begin? For several thousand Oklahomans, September 1 is considered the actual start of fall since it marks the opening day of the first major fall hunting season: dove.

This swift and elusive bird has brought sportsmen and their shotguns to the edge of wheat, sunflower, corn and harvested sorghum fields for generations. Bacon-wrapped dove breasts with jalapeño slices, cooked on the grill, is a tasty tradition for many Sooner state hunters.
